Waste not, want not. Good to the last drop. |
With the assistance of friends, I spent most of the day Saturday, March 18, in the "winery" bottling five gallons of Grenache-Syrah-Mourvedre (GSM) that had been bulk aging for eight months. I managed to get 23 bottles filled, corked and labeled, and one partial bottle that my "assistants" and I drank at the conclusion of our work.
Early signs are this batch, which I call GSM2, will be much better than GSM1 that I bottled last summer. GSM1 was the first wine I made since 1972. It's not very good, but considerably better than the ones I made back in the 70s.
